Huevos Rancheros Tostados

Huevos Rancheros Tostados is a delicious tradition Mexican breakfast full of color and flavor.  This easy 10 minute breakfast has perfectly spiced black beans, a pan fried egg, fresh avocados and peppers, all stuffed in a warm corn tortilla. Breakfast has never tasted so good!

  • 1 can black beans (drained and rinsed)
  • 2 TBS ground flax seed
  • 1/4 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • corn tortillas
  • 4 eggs
  • Fresh diced vegetables like red and orange peppers, jalapenos, tomatoes, cilantro


  1. Heat beans over medium heat.  Add flax seed, oregano, salt, onion, garlic, paprika, and cumin.  Stir and mash the beans while it gets warmed up.
  2. In another pan, over medium heat, make 4 fried eggs.
  3. Spread beans over corn tortilla, then layer with 1 egg and vegetables of choosing.  Add some hot sauce for some extra flavor.  Enjoy!
