I made a delicious pork loin the other night (of course it was too dark to snap a picture that served this meal some justice). We still had half the pork loin left, so I had to figure out a way to re-purpose the meal without listening to my kids complain. That’s a hard act to balance. As soon as these were served up, they were gone and they were begging for seconds. Hope ya’ll enjoy!

- 1 LB pork loin (or pork chops), cooked, and shredded
- 2 tbs coconut oil
- 2 TBS fajita seasoning
- 1/2 onion, diced
- chopped lettuce
- diced tomatoes
- salsa & guacamole
- corn tortillas
1. Cook pork and shred when it is cool.
2. Heat cast iron on medium heat. Add coconut oil to pan and wait until the pan is very hot. Add diced onion, and season with salt and pepper. Caramelize the onions for about two minutes, or until you see the edged of the onion turn black.
3. Remove the onion from the pan. Add the pork back to the pan, along with 1/4 cup of bone broth and 2 TBS of fajita mix. Cook for about 2-3 minutes or until liquid has reduced. Serve up with some fresh fixings and enjoy!
