It’s citrus season here in Florida! I am trying to work in as much citrus as I can to help ward off all the lovely sicknesses my school aged daughter likes to bring home to me. What a giving child. This chia pudding has an awesome consistency, and has a light, dreamy flavor. Throw on a few berries, maybe some flax seed or hemp hearts, and you have yourself a breakfast rich in omega fatty acids that will help keep your brain healthy and happy.
- 2 cups of full fat coconut milk
- 1/2 cup chia seeds
- 1/4 tsp orange extract
- 1/2 tsp vanilla
- 1/4 cup maple syrup
- pinch of salt
1. combine all ingredients in a large mason jar. Whisk until chia seeds are not clumpy.
2. Cover and let sit on counter for ten minutes, shaking vigorously every couple of minutes.
3. Refrigerate overnight.
Serve with fresh fruit, hemp hearts, flax seed, or whatever your taste buds desire!
