Who doesn’t love a good sandwich wrap for lunch? The possibilities of flavors and combinations are endless, and it’s a great way to get a couple of servings of vegetables in for the day. 4 large collard leaves, destemmed towards the bottom.
1 can tuna
1 celery stalk
handful of chopped cherry tomatoes
mayonnaise (don’t skimp on quality with this- no miracle whip! If you cannot find a good quality, you can opt for avacado oil)
salt & pepper
Combine squeezed can of tuna, mayonnaise, salt, and pepper in a bowl. Take destemmed collards and fill with ingredients the way you would with a burrito. Roll as such, and enjoy!
